There is nothing better than a simple Tomato Pasta (if you ask us)

Shopping List

Bunch of Basil with Stalks (around 30 - 40g)

400g Chopped Tomatoes

2 handfuls of Spinach

2-3 Garlic Cloves finely diced

½ Red Chilli finely diced

Good quality Olive Oil

Cooked Prawns (fresh or frozen)

Prepare and chop your ingredients

  1. Remove the leaves from the basil stalks and put to one side for later

  2. Chop the Basil stalks, Garlic and Chilli

For the sauce

  1. In a frying pan on a low heat, pour in some olive oil, once hot put in your Chilli, Garlic and Basil stalks. Keeping the heat low, allow the heat to infuse the oil with all the flavours until the Garlic starts to slightly brown.

  2. At this point pour in the Chopped Tomatoes and Prawns and stir, allow to simmer for a few minutes until prawns are nearly cooked

  3. Once heated through, stir in the Spinach and Basil Leaves

  4. Once wilted, use tongs to lift your slightly under cooked Pasta into the sauce, allow some of the pasta water to come along too, this will help the sauce come alive

  5. Stir and serve.

For the pasta

  1. Fill a large pan with boiling water and salt

  2. Cook Pasta according to the instructions (turn off the heat just before the Pasta is fully cooked to prevent it over cooking when you stir it into the sauce)

Serve with Salt and Pepper to taste
