Breakfast Burrito



This is a super simple and delicious way of getting an extra dose of veggies into your day.


Shopping List


2 -3 Eggs

1 Wrap

Mix of chosen Veg and Mushrooms

Small amount of Grated Cheddar Cheese  


Method

  1. In a hot frying pan, heat a thumb sized piece of butter

  2. Cook your favourite mix of veg, e.g. Onions, Spring Onions, Peppers, Mushrooms, Spinach, Garlic, basically anything you want

  3. In a bowl, crack 2 - 3 Eggs and whisk

  4. Once the chosen veg in cooked, pour over your Eggs and keep mixing to create a scrambled mix of Eggs and Veg

  5. Load your mix into the middle of the wrap

  6. Sprinkle over some Cheese and fold the 2 ends towards the centre, then turn the 2 long edges into the centre to close the Burrito.

  7. In a separate dry pan, heat to a medium heat and place the Burrito folder side down for 1 - 2 minutes until browned and holding closed 

  8. Flip and repeat

Serve and enjoy!
